
Celebrity Chef Michael Mina Ribbon Cutting at Disney World’s Newest Restaurant Bourbon Steak. Walt Disney World Swan and Dolphin welcomed Celebrity Chef Michael Mina and The Mina Group at the ribbon-cutting for Bourbon Steak yesterday. Disney’s newest steakhouse replaces the recently closed Shula’s inside the Swan and Dolphin resort.
Sean Verney, the General Manager of Walt Disney World Swan and Dolphin, welcomed guests in attendance and introduced Greg Sherman, Director of Food & Beverages for the resort. Greg gave a brief synopsis of how they worked with The Mina Group to bring in Bourbon Steak to the location at Walt Disney World. Importantly, he mentioned how the transition from Shula’s to Bourbon Steak took place, including how the restaurant group retained 100% of the staff. Retraining them to the Mina Group standards, and were proud for them to show off their skills to guests when the restaurant opens to guests on July 26th, 2025.

After the ribbon cutting was complete, we were given an opportunity to tour the new space, grab some cocktails, and enjoy some of the new offerings. We also spent a moment with Chef Mina, who is engaging and has a smile that could disarm anyone. Egyptian-American Chef Mina is a highly acclaimed restaurateur, leading The Mina Group to multiple James Beard Awards and Michelin stars.

Don’t miss Michael Mina’s famous Tuna Tartare, prepared right at your table with unique ingredients. Other appetizers include Black Truffle Agnolotti and Bacon-Wrapped Scallops for a rich, flavorful start.
The restaurant features an outstanding selection of top-quality steaks, including a 10-oz Filet Mignon, a 22-oz 45-Day Dry-Aged Cowboy Ribeye, and the show-stopping 40-oz Hay-Smoked Tomahawk Ribeye, carved tableside from a custom trolley. They also offer sought-after Wagyu beef, like Miyazaki A5 Strip Steak and Snake River Farms domestic Wagyu Rib Cap. You can customize your steak with sides like Black Truffle Butter or Béarnaise Sauce.
Beyond steaks, other main courses boast bold flavors. Try the Big Eye Tuna Au Poivre with wild mushrooms, or the lighter Miso Broiled Sea Bass. A true highlight is the Maine Lobster Pot Pie, dramatically presented tableside in a copper pot with a creamy lobster-brandy sauce.
To end your meal, Bourbon Steak offers decadent desserts that mix classic tastes with refined techniques.
