Four Flamingos: A Richard Blais Florida Kitchen at Hyatt Regency Grand Cypress is throwing one of the most unusual event lineups we’ve seen from an Orlando restaurant this summer, and Chef Richard Blais himself is showing up for all of it. Between late July and early August, guests can compete in a guacamole cook-off, rally against the chef on the pickleball court, dig into a Puerto Rican-inspired BBQ picnic, or slip into a two-week-only lakeside dining pop-up. Guac It Out Challenge & Mixology Class kicks things off on Wednesday, July 29 at 4 p.m. at Little Flamingos inside La Coquina Ballroom. Guests start with a tequila-focused mixology class covering Four Flamingos’ signature margarita, including a liquid nitrogen demonstration from Chef Blais, then split into teams for a guacamole competition using surprise ingredients. The “Blais of Glory” Pickleball Tournament follows on Thursday, July 30. Matches run 2 to 4 p.m. on the resort’s pickleball courts, with participants rotating through 15-minute games alongside and against the chef himself. A reception at Little Flamingos runs 4:30 to 5:30 p.m. with light bites, drinks and a meet-and-greet. Player tickets are $105 plus tax and gratuity, spectator tickets are $75 plus tax and gratuity, and a $45 beverage package add-on is available for anyone who wants house wine, beer, hard seltzer or spirits. The series wraps with the BBQ Pig’nic on Friday, July 31 from 6:30 to 9 p.m. at Windsong Fountain Lawn. The menu centers on Puerto Rican-style lechon asado slow-roasted in Four Flamingos’ key lime mojo, a house-made sauce bar with jerk glaze and jalapeno chimichurri, and sides like Caribbean snapper ceviche, mango kimchi slaw and arroz con gandules. Dessert options include mango basil arroz con leche and guava cheese quesitos. The evening also includes a live Q&A with Blais. Running alongside all of it is Little Flamingos, a lakeside pop-up dining experience overlooking Lake Windsong, open nightly from July 26 through August 7 (closed July 31 for the BBQ Pig’nic) from 5 to 9 p.m. While the main Four Flamingos restaurant undergoes enhancements, the pop-up moves the experience into La Coquina Ballroom with a curated menu of restaurant favorites, staple cocktails and a few new additions.
