Four Loews Hotels at Universal Orlando just launched a new cocktail and beverage program called Alchemy by Loews, and it goes a lot further than a standard hotel bar menu. Universal Helios Grand Hotel, Loews Royal Pacific Resort, Loews Portofino Bay Hotel, and Loews Sapphire Falls Resort all rolled out the program on March 25, 2026, each offering its own exclusive drinks not available anywhere else on the resort.

What Is Alchemy by Loews? The program takes its name from the idea of transformation. Loews built it around the concept of botanical apothecaries, layering each drink with intentional sensory details that go beyond what you would expect from a hotel bar. That includes attention to temperature, glassware, aroma, and texture, as well as regionally inspired ingredients and seasonal botanicals tied to each property.
The lineup also includes what Loews calls Free Spirited options, nonalcoholic drinks crafted to the same level as the cocktail menu. The full program is designed to serve guests whether they drink alcohol or not, without treating the nonalcoholic menu as an afterthought.
Bar Helios at Universal Helios Grand Hotel. Universal’s newest hotel gets a cocktail that leans into unexpected flavor combinations. The Clash of the Titans at Bar Helios is built on Tanqueray gin with lemon, St. Germain, and egg whites, then finished with a feta honey made from equal parts honey and feta water, plus a feta garnish. The result plays savory against sweet in a way that is hard to place until you taste it.

Orchid Court Lounge and Sushi Bar at Loews Royal Pacific Resort. Royal Pacific’s cocktail leans into tropical flavors with a sharp twist at the end. The Golden Dawn at Orchid Court Lounge and Sushi Bar blends pineapple rum, mango, and almond orgeat, then finishes with a garnish that pulls the whole thing in a different direction: a yuzu gummy dipped in togarashi. Sweet and tropical up front, spicy and citrusy at the end.

Three Cocktails at Loews Portofino Bay Hotel. Portofino Bay is putting out the biggest Alchemy lineup of any property, with three distinct drinks spread across its dining venues.
Trattoria del Porto is serving the Italian 75, a riff on the classic French 75 made with Portofino Dry Gin, Crème de Violette, and a mist of Essentia Dolce Vita, topped with prosecco and a lemon twist. It reads as a sparkling, aromatic take on the original.
The Thirsty Fish is where things slow down considerably. The Dino is built on Michter’s Rye and Carpano Antica, but the defining ingredient is a Campari that has been washed in Italian espresso and cinnamon for days and then aged three months in a whiskey barrel. That kind of preparation is unusual at a hotel bar and gives the drink a depth you are not going to find anywhere else on property.
Mama Della’s Ristorante rounds things out with the Key Lime Crush, which uses a house-made key lime and vanilla cordial topped with soda water. It is lighter and more playful than the other two Portofino drinks, and the description of dessert-in-a-glass is not far off.



Strong Water Tavern at Loews Sapphire Falls Resort. Sapphire Falls has always played up its Caribbean identity, and the Alchemy cocktail there leans into that history while doing something a little unexpected. The Sazerac at Strong Water Tavern swaps the traditional rye for Letter of Marque Strong Water Rum, pairs it with demerara and Peychaud’s bitters, then finishes with an absinthe mist and a lemon peel. The Sazerac is one of the oldest cocktails in American history, and this version earns its place on that list.

The cocktail menus at Universal Orlando hotels have not historically been a reason to plan your evening around them. Alchemy by Loews changes that for at least a few of these spots. The Dino at The Thirsty Fish alone is the kind of drink you talk about after the trip. The feta cocktail at Bar Helios is either going to be your thing or it is not, but the fact that Loews is taking that kind of risk at a theme park hotel says something about where this program is headed. If you are staying on property, these menus are worth building time around rather than treating as an afterthought after the parks close.
